Skimmers are a must when deep frying. Choosing a strainer should match the size of the wok. Normally 4-6" strainers are used on 12-14" woks. Larger 8" - 10" skimmers work well with 16-22" woks. However, some people like to mix and match, using a small skimmer with a large wok, and there's nothing wrong with that.
